Product Options
Product options default to be listed in alphbetical order. If you would like them to be listed in a different order, you need to change the setting option_value_default_sort to custom. Shop --> settings --> base settings --> Miscellaneous --> option_value_default_sort --> custom. Once it is set to custom you will be able to drag and drop the options into the order you want (Shop --> Product Data --> Product Options --> Sort Values).
Product Attributes
Product attributes default to be listed in alphbetical order. If you would like them to be listed in a different order, you need to change the setting attribute_value_default_sort to custom. Shop --> settings --> base settings --> Miscellaneous --> attribute_value_default_sort --> custom. Once it is set to custom you will be able to drag and drop the attributes into the order you want (Shop --> Product Data --> Attributes --> Sort Values).
